Be My Valentine

My honey took me out to dinner for Thai food(it was average) and for chocolate malts at Sharie's afterward. We had a fantastic time and re-kindled some of our romance. As far as hot husbands...mine is the HOTTEST! Love ya dear!

I decided today that tan fat looks much better than pastie white fat, it is a fact.

Here is a great muffin recipe to try: ( No processed, refined sugar or enriched flour also low sodium,none if you use coconut oil instead of butter or unsalted butter)

beat together:
2eggs
1/2 cup pure maple syrup
then add:
1/2 cup butter,melted or melted coconut oil
mix together:
1 tsp. baking soda and 1/4 cup buttermilk or plain yogurt...let fluff up and add to mixture.
Next add:
1tablespoon. cinnamon
1/2-1 tsp ginger
1/4 tsp cloves
1 tsp vanilla
and finally:
1 3/4 cup whole wheat flour
optional(and terrific) add:
1/2 cup chopped nuts(I prefer pecans)
Put into mini muffin pans and bake at 325 for 15-20 minutes(15 on convection bake and 20 on regular bake.)

This recipe is not really sweet but very yummy and healthy and satisfying! I got it from my sister-in-law that just had the beautiful baby...I think I ate about 30 of them the day of the birth, watch out they are addictive.
